Bach’in it tonight? Pull together this yummy Italian dish from leftovers and pantry mainstays.
2 Tbsp olive oil
1 slice of bread
1 cup cooked pasta
2 cloves of garlic
1/2 cup string beans
1 oz anchovies
fresh parsley, chopped
salt and pepper
mandarin oranges (optional)
Place skillet on stove over medium heat. Cut bread into cubes. Add half the oil, all of the bread, salt and pepper to taste. Toast bread and set aside. Saute the sliced garlic in the remaining oil until tender; add beans, then anchovies and heat through. Stir in the pasta and parsley. Remove from heat. Sprinkle with toasted bread crumbs. Garnish with mandarin oranges.
Serves one.
