Mix:
1 egg
3/4 cup sugar
1/2 cup soft unsalted butter
Sift:
3/4 cup flour
1/2 cup almond flour
1/4 cup rice flour
1 tsp cream of tartar
1 tsp baking powder
a dash of salt
Coating:
cinnamon
sugar
Combine the egg, sugar and butter together with the sifted dry ingredients. Chill for at least two hours.
Preheat oven to 400°F. Form chilled dough into walnut sized globs. Combine sugar and cinnamon in a small bowl and dust each glob. Position cookies a good 2-3 inches apart on a baking sheet. Bake 8-10 minutes. Once the cookies are out of the oven, let them cool for a minute or two on sheet before moving to a rack.
Makes 12 or so cookies.
